I did check out a couple of other sites, and what made me feel more comfortable with yours was how much information you have on your site about sharpening and that you have been doing this for a long time. My knives had never been sharpened before, so it was an enormous difference. I was able to cut through things with so much less pressure on the knife! Though it was scary working with such sharp knives at first, I realized how much safer it is than dull knives because you need less pressure. Thank you for a great sharpening job. I am a chef and use my knives all day every day and because of that they lose their edge much faster than the ones I have at home. I have been sharpening them myself for a long time so I know a bit about sharpening. These knives are sharp! Its very hard to get that micro edge that they have now. Sharpening is easy. Sharpening well is not. I sent 15 this time. All different blade shapes, and compositions from carbon to stainless, and even a single bevel Japanese style knife. Each was done by hand with minimal loss of metal. You received them on the 7th and they were on their way back on the 8th! I will tell everyone I know about your service. R. My quality test has been if the knife can shave some hair off my wrist it was sharp enough. My knives are now so sharp I don't even dare trying my old test.
