"My knives aren't worth it!"

Quite often people will say that their knives aren't worth sharpening. Almost every time once I see their knives I would disagree. Their knives are perhaps inexpensive, and perhaps very dull but worth sharpening. First they should be sharpened because no one should be struggling with dull knives. It's not fun and it is certainly not safe. The second reason that inexpensive knives should be sharpened is that inexpensive knives are often made from harder steel than a more expensive knife. The harder steel is harder to sharpen but also it will be slower to become dull again. Perhaps over time you will want to acquire a couple of nicer knives to help make your kitchen a better place but I would recommend to everyone to at least start with the small five knife box as a beginning for your knife sharpening needs. All knives need to be Sharpened

All knives need to be sharpened on a regular basis. At minimum once a year. My goal is to sharpen all your favorite knives on a regular basis. You will have favorite knives and because they are favorites they will be used more often and thus get dull more often. You will fit regularly in to a pattern of every 3, 6, 9, or 12 months depending on how often and how hard you use your knives. I have restaurants that I sharpen on a biweekly basis. My service offers quick turn around time so that your knives are back in your kitchen in just several days. Several things can be hard on a knife and make it dull more quickly than it should. First and foremost is the surface you are cutting on should never (not even once) be metal or glass or corning ware®. Stainless steel has become popular in many home kitchens but please never cut on it. Also there are glass and corning ware® cutting boards that should never have been made, sold, used and most importantly cut upon. Dishwashers can be hard on your knives and especially the knife handles so it is best to always hand wash your knives.
